Khichdi is something I make when I am bored and want to make something with the least bit of hassle.It is delicious and nutritious and I cant think of anything better than a plate of hot khichdi with a little bit of yoghurt on a lazy evening.Traditionally khichdi is made with rice and split moong dal.Instead of the split moong dal,I use whole green moong dal.This way its more healthier and more filling.
Ingredients:
2 cups rice
3/4 cup whole moong dal(soaked overnight)
1 green chilli
1 tomato chopped
1 onion chopped
1/2 cup green peas
1/2 cup carrots chopped
1 tsp cumin seeds
1 tsp fennel seeds
1 bay leaf
4 cloves
1 cardamom
1/2 tsp turmeric powder
4 cups water
salt to taste
oil
Method:
Heat oil in a pressure cooker.Add in the bay leaf,cloves and cardamoms.When they splatter add in the cumin seeds and fennel seeds.
Then add the green chilli and saute for about 5 seconds.Then add the onions.When the onions become transluscent,add in the tomaotes.
When the tomatoes become soft,add the peas and carrots.
Drain the water from the rice and green moong dal.Add these to the cooker.Mix everything well in the cooker.
Add about 4 cups of water or follow the directions of your cooker.Add salt and tumeric powder.Mix well.
Cover and cook for about 1 whistle.
Serve hot with yoghurt.

khichdi is one of my all time quick-meal favourites! most ppl find that funny.. but its true…fresh dahi and achar accompany the khichdi puuurfectly!:D
